Blueberry Muffins
Serving Size: 12
Ingredients:
3 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. sugar
2 eggs, beaten
1 1/4 c. milk
1/2 c. butter, melted
1 tsp. vanilla extract
1 1/2 c. blueberries
Instructions:
Preheat oven to 350 degrees F.
Grease a 12 cup muffin tin.
Sift the flour, baking powder and salt in a large mixing bowl and stir in the sugar.
Place the eggs, milk, butter and vanilla in a separate bowl and whisk together well.
Fold the egg mixture into the dry ingredients with a metal spoon, then gently stir in the blueberries.
Spoon the mixture into the muffin cups, filling to just below the top.
Place the muffin tin on the top shelf in your oven and bake for 20-25 minutes or until done.
