No Worries New York Cheese Cake
Ingredients:
4 tablespoons unsalted butter melted (plus more for the pan)
8 graham crackers (broken into pieces)
2 tablespoons light brown sugar
3 bars (8oz each) cream cheese room temp.
1 3/4 cups granulated sugar
1/8 teaspoon salt
2 1/2 teaspoons vanilla extract
5 large eggs room temp
1 pint sour cream (2 cups)
Instructions:
1. Preheat oven to 350, butter the bottom and the sides of a 9" spring form pan. In a food processor place graham crackers and brown sugar, process until finely ground add butter process until moist crumbs form. Press mixture onto bottom and two inches up the side of pan. Set aside.

2. In a large mixing bowl beat cream cheeses, 1 1/2 cups of sugar, salt and 1 teaspoon of vanilla until smooth. Add eggs one at a time, beat in after each addition and scrap down sides of the bowl. Pour filling into pan. Bake until light brown and center is almost set. About 50 minutes let cool 15 minutes. (Don't worry if the cake cracks, topping will cover).

3. After taking the cake out of oven raise the heat to 450 degrees. In a bowl combine sour cream, remaining 1/4 sugar, and 1 1/2 teaspoons of vanilla. After the cake has cooled 15 minutes spread the topping with a spatula leaving 1/2 inch border. Bake 10 minutes.

4. Let cool, then refrigerate in pan at least 12 hours. Run a knife around the edge of the pan before releasing sides.
