Stir Fried Cod with Mango
Ingredients:
6 oz. carrots
2 tbsp. vegetable oil
1 red onion, sliced
1 green pepper, seeded & sliced
1 red pepper, seeded & sliced
1 lb. skinless cod fillet
1 ripe mango
1 tsp. cornstarch
1 tbsp. soy sauce
1 1/2 c. tropical fruit juice
1 tbsp. lime juice
1 tbsp. chopped cilantro
Instructions:
Slice carrots into thin sticks.
Heat the vegetable oil in a preheated wok.
Add the onions, carrots, and bell peppers to the wok and stir-fry for 5 minutes.
Using a sharp knife, cut the cod into small cubes.
Peel the mango, then carefully remove the flesh from the center stone.
Cut the flesh into thin slices.
Add the cod and mango to the wok and stir-fry for another 4-5 minutes until the fish is cooked through.
Mix the cornstarch, soy sauce, fruit juice and lime juice in a small bowl.
Pour the cornstarch mixture over the stir-fry and allow the mixture to bubble and the juices to thicken.
Scatter with cilantro and serve immediately.
